Usually because the contract was written that way. Some contracts restrict transfers, tax sells to nothing, or let the owner freeze accounts. These conditions are visible in the contract before you buy, which is what a honeypot check looks for.

A token you can buy but cannot sell. The contract allows purchases and blocks or taxes disposals, so the chart looks healthy while holders are trapped. It is detectable by reading the contract's transfer rules.

How do I check who deployed a token contract?

The deploying address is public, and so is everything else it has ever deployed. A wallet that launched several tokens and abandoned each one is the most useful warning sign available before buying.
